The first Dewey’s Pizza opened in 1998 in Oakley, in the City of Cincinnati, Ohio. With a reputation built on excellent service, hand-tossed artisan pizzas and gourmet salads, there are now more than 20 Dewey’s Pizza restaurants in the Cincinnati, Dayton, Cleveland, Columbus and St. Louis markets.

I had a chance to catch up with Jason at a recent conference and learn more about his experience with Mirus.

This is the third entry in a series of blogs designed to evaluate the pros and cons of two approaches to restaurant performance management.  In the previous entries we defined the terms Above Store Reporting and Enterprise Data Warehousing (EDW).

Both methods are appropriate for restaurant companies, and the best fit for any individual company depends on that organization’s culture and how much they drive the business based on data.

This is the first of a series of posts on the topic of restaurant food costing and perpetual inventory systems, which in most cases are two parts of a typical restaurant back office (BOH) system.  I'd like to collect your input on today's question:

Franchise growth is often challenged by a lack of time, focus and reliable reporting. Your time is spent solving everyday problems, selling locations and assistance with site selections, training new franchisees and not to mention, answering numerous questions from your growing franchise community. As a result, your sales reports aren’t timely, the information coming in overwhelms you and then there’s a question about the validity of self-reported royalty numbers presented by the franchisees.

Another Bite Out of Your Restaurant Profit Margin

It’s certainly not easy to own and operate a successful restaurant chain in today’s day and age. Take for example, a recent story about a small restaurant that placed a "minimum wage fee" on their customer receipts. The move was intended to shed a light on the raised minimum wages. While some customers understood and sympathized with the owner, others reacted harshly. Perhaps this was not the best way to handle minimum wage hikes.

Between high food costs and energy inflation, the unavoidable losses due to fraud, potential increases in state unemployment taxes, the ACA and now the imminent wage increases, restaurant operators are fraught with worry, more than ever, over keeping their doors open and their businesses profitable.

What are Sparklines?

A Sparkline is a data visualization designed to give a quick representation of numerical or statistical information within a report. Microsoft has used this feature in their Excel spreadsheet software and Mirus has recently introduced it's own version designed for restaurant reporting.
